
Sometimes, I’m craving chocolate so badly it’s all I can think about. Usually it’s like 8:30pm, I’m deep in a Netflix hole and not in the mood to be Betty Crocker. Anybody else? I don’t need very much sweet to satisfy me, but it has to be a good quality and preferably with something crunchy involved. This is a quick ‘not too naughty’ snack that fills the craving. It’s basically a home made version of barkThins without having to go to Costco.
This is ready in less than an episode of whatever you’re watching and along with satisfying a chocolate craving, it’s high in fibre, has plenty of healthy fats and a bit of protein. Score.
Amounts totally depend on how much you feel like eating or making. You can 100% eyeball this.
All you need is:
- Mixed nuts – I used pecans, shredded almonds, pumpkin seeds- but you could realistically use any nut
- Hemp Hearts
- Good quality dark Chocolate (chips, bar whatever)
- Coconut oil
Rough amounts I used for this batch? About 2c Nuts, 1/4 cup hemp hearts, 1c chocolate chips & a tbsp coconut oil.
Instructions:
Mix nuts and hemp hearts in your cake tin, glass storage container or whatever vessel you have with sides that can fit in your freezer. I used a glass Pyrex container as shown above.
Put about 1 tbsp Coconut oil into 1cup (ish) of chocolate chips (or broken up chocolate block) and put in a microwave safe cup or bowl and heat for 15 seconds. Stir and repeat in 15 second increments until chocolate is soft enough to stir until smooth. DO NOT OVER HEAT- it will ruin it. Go slow & do it in increments.
Once chocolate is melted, pour over nut mixture and give it a quick stir. Using a fork or spoon, press it down into the pan and when you’re done- pop it in the freezer for 20/30 min or until chocolate has hardened.
Remove from pan, break into chunks and enjoy 🙂

This looks delicious! I want to try it. Whenever I am craving chocolate I tend to make chocolate banana ice cream. I just use a food processor and mix together frozen bananas, some vanilla almond milk, and baking cocoa. If the bananas are ripe enough you don’t have to add any sugar and it tastes like like chocolate ice cream. 🙂
